Raspberry Lemon
Punch

INGREDIENTS

500 grams fresh or frozen raspberries (if using frozen, thaw first)

300mls Bickford’s Diet Lemon Cordial

2 tablespoons honey

1 litre soda water or dry alcohol-free sparkling wine

Lemon, extra raspberries and mint to garnish (optional)

DIRECTIONS

  1. Blend raspberries, lemon cordial and honey in a high-speed blender.
  2. Strain into a small punch bowl or pitcher.
  3. Add soda water or alcohol-free sparkling wine and stir gently.
  4. Add ice, raspberries, lemon slices and mint.
  5. Serve over ice and enjoy!
