INGREDIENTS

Makes 12

100g butter softened

100 brown sugar

2 eggs

165g plain flour

5g baking powder

60ml milk

60ml Bickford’s Iced Coffee Syrup

Buttercream

150g butter softened

300g sifted pure icing sugar

60ml Bickford’s Iced Coffee Syrup

DIRECTIONS

  1. Heat the oven to 170°C
  2. Whip butter and sugar until light and fluffy
  3. Combine the icedcoffee syrup and milk
  4. Add the eggs one at a time. Fold in the flour and milk mix
  5. Spoon into a lined muffin tray and bake for 10-12 minutes until the center bounces back when touched or insert a skewer and it comes out clean
