
INGREDIENTS
2-3kg pork ribs
300ml Bickford’s Iced Coffee Syrup
300ml tomato ketchup
2 inch piece ginger sliced
60ml apple cider vinegar or red wine vinegar
40ml honey
3 cloves garlic crushed
15g cumin powder
10g coriander powder
10g chili powder
20ml soy sauce
1 cinnamon stick
2 star anise
DIRECTIONS
- Cut the ribs into 2 or 3 pieces. Place in a large saucepan and cover with water
- Add the sliced ginger and bring to the boil. Discard water and repeat
- Then cover with water and bring to a simmer and simmer gently until tender, approximately 45 minutes
- Drain and place into marinade, and marinade over night
- Combine all other ingredients in a large bowl and season to taste
- Drain the tender ribs and place into marinade, and marinade over night or up to 2 days
- Cook on a hot BBQ turning and basting until sticky and delicious, or roast in a hot oven
