Hazelnut Coffee Biscuits

INGREDIENTS

Makes 52 cookies at 12g each

250g hazelnut meal

250g plain flour

140g caster sugar

200g butter

40ml Bickford’s Iced Coffee Syrup

1/4 tsp salt

1 egg

1 lemon, zest

1 tsp vanilla bean paste

Filling

60ml Bickford’s Iced Coffee Syrup

150g dark chocolate (70%)

DIRECTIONS

  1. Whip butter and sugar until light and fluffy
  2. Add the remaining ingredients and gently fold together
  3. Chill for ½ an hour then roll into small balls and bake at 160°C for about 10minutes until lightly golden. Allow to cool
  4. Melt the chocolate and then add the iced coffee syrup. Allow to cool and start to thicken
  5. Spoon a small amount in centre of one cookie. Take the second cookie and sandwich together
  6. Repeat for all cookies and dust with icing sugar
