Pineapple and Passionfruit Glazed Crispy Pork Belly Bites
Ingredients
Glaze
- 3 tbsp Bickford’s Pineapple Passionfruit cordial
- 2 tbsp fish sauce
- 1 garlic clove, finely minced
- 1 small piece of ginger, finely grated
- 2 kaffir lime leaves, very thinly sliced (reserve 1 for garnishing)
- Squeeze of fresh lime juice (about ¼ of a lime)
- Optional:Slices of red chilli for heat and some fresh coriander

- Pork belly, cut into 1-inch cubes
- Pinch of salt

Prepare the Glaze
Combine and Serve

- 1. Pork belly, cut into 1-inch cubes
- 2. Air fry at 200°C for 16 minutes or until crispy.
- (For the pork belly; feel free to cook the pork belly to your preferred cooking method, but for a quick and easy weeknight dinner – you absolutely cannot beat this air-fryer method)
Prepare the Glaze

- 3. In a small bowl, mix the cordial, fish sauce, garlic, ginger, one sliced kaffir lime leaf, and a squeeze of lime juice.
- 4. Heat the mixture in a wok or pan over medium heat until it begins to bubble and simmer. Avoid over-reducing, as the sauce can become too salty.
Combine and Serve

- 5. Toss the crispy pork belly bites in the warm glaze until evenly coated and sticky.
- 6. Garnish with the reserved finely sliced kaffir lime leaf, a squeeze of fresh lime juice, and, if desired, some thinly sliced red chili and fresh coriander.
Serving Suggestions
- Serve with steamed rice or a fresh slaw or salad
- Get creative by using the pork belly bites as a filling for Southeast Asian-inspired tacos.
