Tropical Chia Pudding with Blueberry Jam
Ingredients
- ¼ cup chia seeds
- 1 tbsp Bickford’s No Added Sugar Tropical Cordial
- ½ cup canned coconut milk
- ½ cup Greek yoghurt, divided
- ½ cup frozen blueberries
- 2 tbsp frozen passionfruit pulp, thawed
- Zest of 1 lemon, to serve
Method
- In a bowl, combine chia seeds, coconut milk, cordial and half the yoghurt. Mix well and refrigerate for at least 1 hour, or overnight to set.
- Heat frozen blueberries in the microwave for 1 minute, or warm on the stove, until melted.
- Spoon the blueberry jam into a serving jar or glass, then layer with the set chia pudding.
- Top with the remaining yoghurt, thawed passionfruit pulp, and lemon zest.
