Tropical Chia Pudding with Blueberry Jam

Ingredients

  • ¼ cup chia seeds
  • 1 tbsp Bickford’s No Added Sugar Tropical Cordial
  • ½ cup canned coconut milk
  • ½ cup Greek yoghurt, divided
  • ½ cup frozen blueberries
  • 2 tbsp frozen passionfruit pulp, thawed
  • Zest of 1 lemon, to serve

Method

  1. In a bowl, combine chia seeds, coconut milk, cordial and half the yoghurt. Mix well and refrigerate for at least 1 hour, or overnight to set.
  2. Heat frozen blueberries in the microwave for 1 minute, or warm on the stove, until melted.
  3. Spoon the blueberry jam into a serving jar or glass, then layer with the set chia pudding.
  4. Top with the remaining yoghurt, thawed passionfruit pulp, and lemon zest.
